The Nova*s Bakery story begins when the Novakovic family made the decision to permanently leave their home and loved ones and move to the United States in search of a brighter future for them and their young children. Originally from Belgrade Serbia, Vlado and Sladjana Novakovic first settled in Boston MA where they both quickly earned management positions in a small local bakery. Atracted by the charm of starting their own business and seeking warmer weather, the Novakovics originally planned to relocate to the “Sunshine” state of Florida. It was only after a friend living in Charlotte complained that there were no good local bakeries in the city that the Novakovics decided to make Charlotte their new home.
In October 1996 they hung A tiny sign and opened their first location in a mainly industrial section of town off of South BLVD on Iverson way. At first the Novakovics were only planning to do wholesale but after an overwhelming show of support from the comunity and many requests they were persuaded to open up a small retail store in the front of their building. Regulars started to form and soon enough, they rapidly outgrew the existing location. They then moved to 1511 Central Ave. which remains Nova*s Bakeries headquarters to this day. Soon Nova*s signature breads and pastries began popping up in popular local restaurants and grocery stores.
The Novakovic family believes that every bread is at its best the day it was baked. Fresh European style breads mean a lot to this family and the use of natural and organic ingredients are an important component in achieving the high standard Nova*s strives to maintain each and every day. In an increasingly pre-processed and pre-packaged world, Nova*s Bakery remains commited to making their products the same way they have been made back in Serbia for generations, naturally. Even after 20 years, the Novakovics have refused to grow their business through the use of chemical dough conditioners and preservatives.
After 20 years in the baking business, Nova’s has found its niche in both the community and Charlotteans hearts. The one-time two person operation has expanded to four retail locations and provides businesses with fresh baked artisan breads in multiple cities throughout North and South Carolina.
